How is this different from notes?

Notes wait to be found. Brainbot's whole job is returning something before you've thought to look for it.

Do I have to organize anything?

No. Any system that needs upkeep gets abandoned in a month. That's the failure mode we're built against.

Where does my data live?

Your captures are yours. They aren't sold, aren't used for advertising, and can be exported or deleted whole.
